Even after he’d gone on to bigger (or at least bigger-budgeted) things, like 5 Ninth in the meatpacking district and the poised-for-expansion Fatty Crab (headed to the Upper West Side in October), Zakary Pelaccio was remembered fondly for the inventive “Brooklyn Global” cuisine he concocted at Williamsburg’s now-shuttered Chickenbone Café. After a slew of far-flung consulting projects, Pelaccio returns to a smaller stage—and to Williamsburg’s South Side—with Fatty ’Cue, an equally quirky Southeast Asian collaboration with former Hill Country pitmaster Robbie Richter. Things you’ll find on their pork-centric menu: a smoked-fatback burger, red-curry-cured bacon, and smoked beef brisket with a coconut-milk-and-black-pepper cure.
