    Joey Ramone would roll over in his grave at the idea of bottle service. But as CBGB and Continental have proved, rock clubs selling $3 cans of PBR are Starbucks franchises in the making. The next-generation places—bars like Snitch, Hiro Ballroom, and R and R, which is in the meatpacking district—are paying the bills with markups like $225 for a bottle of Jack and entrance to the VIP area. R and R is gritty enough to be taken seriously: Black Rebel Motorcycle Club and Morning After Girls have taken to the subterranean stage alongside countless no-name acts, and the Bravery and Audioslave recently held after-parties here.

Competition breeds the best. If only one pizzeria existed in New York, of course, there’d be no real winning slice. Thankfully, we’ll never know what that sorry situation tastes like, since pizza—like dance parties, dog runs, and fried chicken—has to evolve upward here.
